It appears that all clocks have broken this afternoon.  It has been the longest day EVER.  Where are you, Friday?  They announced an early dismissal, which I'm sure will make that day go incredibly slow also.

I'm super excited for this weekend as it will mark the first official trip of 2014 to the fine establishment that is the Rum-de-Gun Resort.  Saturday's high is 64, so, outdoor-day-drinking, yay.

Tonight we're making our second trip to a newly-discovered place with a great wing night, The Pour House on Derry Street (the nicer end of Derry Street, close to Hummelstown).  They do 45-cent wings, and you can choose boneless or regular.  The sauces I've tried are pretty good, and they have a decent draft beer selection too.  I'm going to pretend that I didn't just eat wings last night.  When I say I could eat them every day, I am not even close to kidding.  I. Love. Wings.  I had a salad for lunch; I'm also going to pretend that it wasn't covered in cheese, croutons, and ranch dressing.  hashtag healthy.

I'm not sure why I always feel the need to start my posts with comments about the weather, but what a beautiful spring morning it is!  Spring is definitely my favorite season, because it leads into my second favorite season, Summer, both of which are prime outdoor-drinking seasons, my favorite hobby.

We had our first outdoor volleyball scrimmage last night, against our "rival" team...we played on sand courts, which none of us are used to, and they beat us 2 games to 1.  We played a 4th game to 15, and they beat us that game too.  I hate them.  However, we played for an hour and a half, so I got to chalk up 90 minutes to my #1800minutechallenge spreadsheet, WIN!
 
I just want it to be the weekend already.  Even though we have a ton of stuff going on, all of it is better than having to be at work all day.  I get into these funks where I just REALLY hate getting up and going to work every-freaking-day.  I mean, I'm never a huge fan of it, but some weeks I despise it more than ever.
 
I'm making the Pioneer Woman's baked ziti tonight, I'm sure it'll be delish.  If I feel like it, I'll report back with pictures.

Cast Iron Love

Well, this morning's drive was quite miserable.  After seeing 60-degree temperatures and sunshine yesterday afternoon, it was definitely NOT what I was expecting to see when I looked outside today.  Screw you, April showers.

I made better-than-El-Rodeo chicken fajitas last night.  I know it seems like I'm always saying how everything I cook is amazing; and, that's the end of that statement.  It is.  Here's what I did:

Heat 2 tablespoons-ish of canola oil in a cast iron skillet.  The cast iron skillet is vital to the preparation of this dish.  If you don't have one, get your ass to Bass Pro and buy one.  I recommend Lodge brand.  You're welcome.

When you get back from shopping, slice some boneless, skinless chicken breasts into strips, and place in a bowl or on a paper plate like I did because I don't have a dishwasher and attempt to use as little dishes as possible when making a meal.  Sprinkle a few shakes of the following spices onto the chicken, and make sure it coats all of it: Kosher salt, black pepper, garlic powder, onion powder, Adobo seasoning, paprika, chili powder, and cumin.

Throw the chicken into the heated oil in the skillet, and cook for about 10 minutes.  Do NOT overcook the chicken.  I know that you're all terrified of serving undercooked poultry, but as long as it's not pink in the middle, it's perfectly fine.  Trust me.

Remove the chicken from the skillet, and into the same skillet (for God's sake do NOT clean it), put some sliced bell peppers and onions.  I used half a bag of "stir-fry pepper mix" I had in the freezer, along with half of a fresh onion, sliced.  I added a couple shakes of crushed red pepper, but you could also include fresh jalapeno.  You could really add whatever you wanted here, I kind of wished I had some mushrooms too.  Dump a couple splashes of beer in with the veggies (I hope you picked up one of those nice Bass Pro Shops coozies while you were out), turn the heat up to medium-high, until the beer is almost gone, stirring frequently.  Lower the heat to medium-low, add the chicken back in, toss around for a minute or two, and that's that.


Heat up a couple tortillas in the microwave for about 20-30 seconds, and add the chicken and peppers and whatever toppings you so desire.  We didn't have any sour cream, but honestly it didn't really need anything, it was SO flavorful on its own.

Tuesday Morning

After last week's craziness, coupled with being on my deathbed all weekend, I'm quite thrilled to have a fairly quiet week ahead of me.  But for the love of GOD, can it please warm up to at least 50 degrees for longer than one day at a time?  I'm so sick of wearing a winter coat.  It's March 25th, for crying out loud.

When I was coming up with my weekly meal plan on Sunday, I decided to check my Pinterest boards for inspiration.  I found this little gem on my Food From the Homeland board.  I'm allowed to call it that because I have an Asian husband.  The recipe has since been relocated to my NAILED IT. board, because, well, I totally did.

It was seriously SO good.  Marinating, then coating, then frying the chicken was kind of a pain in the ass, but definitely worth it.  You could also complete those steps, and then add whatever sauce you wanted to it - or possibly paint thinner, because the chicken was that good.

Tonight I'm making pork chops in the cast iron skillet, and some kind of sauce/seasoning...it's probably going to be one of those nights where I use all 8761345 bottles of condiments in our fridge.  That number is only slightly off; I would estimate that 2/3 of the refrigerator space is occupied by some kind of salad dressing, sauce, or pickled item.

I'm also going to join the cauliflower craze that appears to be sweeping the Pinterest world, since I scored two heads of it for about $3 at Weis.  I have a few recipes in mind, but I'm a little skeptical on any recipe that uses a vegetable for its main ingredient, and claims, "Tastes EXACTLY like buffalo wings!!!"  Um, kay.  I'll be the judge of that.

Oldhead

I am officially old.  I was home by 8:30 last night, on St. Patrick's Day, and in bed by 10:00.  I had five-ish drinks or so, and I was at work, on time, and functioning this morning.  And I'm totally okay with that.  It seems like it's been a decade, when in reality it was only three years ago, that I started my day at 7 AM drinking green beer and eating an Irish breakfast before work.  Once the workday was over, on that same day, going out for "happy hour" turned into something more like a Happy Evening, and quite an Unhappy Morning.  Good times, but I'm glad that stage of my life has ceased.

Moving on...this past weekend included all of my favorite things: food, family and friends, drinks, and sunshine.  Friday night, we tried out a new-to-us restaurant, Smoked BBQ, and it was great.  I'd highly recommend it to anyone looking for authentic barbecue, without an overly smoky taste.  That's one of my biggest pet peeves; I prefer my meat to taste like meat, not woodchips.  I got the Bleu Rachel sandwich, which had thick-sliced turkey breast that was smoked perfectly, topped with bleu cheese and a creamy apple slaw, on the biggest pieces of toasted rye bread I've ever seen.  Amazeballs.

On Saturday, my mom, sister, and sister's BFF/basically my other sister, came down for lunch and outlet-shopping, so we hit up our favorite wing joint, the Boro.  It was outstanding as usual.  Later in the day, an impromptu cookout turned into an all-night gathering at my brother-in-law's house, which was super fun.  It was so nice to be outside, even if it was a tad chilly. 

Emma's first outdoor soccer tournament of the season is this weekend, here's hoping it's above 50 degrees and the sun is shining!

Spring is in the Air

FINALLY.  I'm beginning to feel more like a happy person again.  It was still daylight at 7:00 PM last night, and it was fabulous.  It's amazing what a little extra sunshine and above-freezing temperatures will do for a girl.

This weekend was quite productive, and the sun was out!  After spending an hour and a half deciding where we going to eat on Friday after work, we ended up at the Parkside, which is always delightful.  Saturday morning, I woke up early and headed to TC for the day, making stops at my grandparents' house, my BFF's parents' house to pick up a few bottles of the best water ever, and the elementary school to see my mom, before heading to another BFF's house to play arts and crafts and drink wine.  Sunday was spent cleaning and organizing, and I also made one of my favorite meals in the world, Ham and Green Beans. 

We went to the gym this morning for the first time in probably two months, and it was great.  I started a "running for beginners" plan, since I'm in terrible shape.  It's a 12-week program, so we'll see how long this lasts.  Also, my co-workers and I started a 30-day "arm challenge" at the beginning of the month, which includes various amounts of push-ups and chair dips, plus planks, for anywhere from 15 to 90 seconds.  I like it, and even if I don't do a whole workout, it's a quick thing that takes less than 5 minutes to do every day.

In addition to all of that, I've been going to physical therapy for 4 weeks now, and I feel like my back is going to be #beast this summer from all of the exercises.  Also, my back/neck pain is actually going away, or at least feeling better, for the first time in almost six years.  Win!

#Wah.

I just can't, with this winter any longer.  It's affecting my mood on a daily basis, I'm sick of looking at this disgusting, dirty snow.  I'm tired of my winter clothes, coats, scarves, and gloves.  I don't want to do anything but watch 13 hours of Netflix every day of every weekend.  I promise I won't complain too much this summer when it's 104 degrees.  I just want to be sitting by the pool, in a bathing suit and sunglasses.  That's all.

Shits and Giggles

For some reason, today doesn't really feel like Friday.  I'm obviously thrilled that it is, but I just don't have that WOO IT'S FRIDAY feeling.  Perhaps it's because I've been so miserable all week.

SHITS

- I'm so sick being cold.  And furthermore, I'm sick of spending money out the ass to simply not freeze to death.  I hate oil.


- It's supposed to snow again on Sunday, during which time I'll probably be a #snowplowwidow.  Let's make that a trending hashtag.  Go.

GIGGLES

- I'm getting my hair done tomorrow by my BFF Heather, and I am SO freaking excited about it.  I've been wondering how long it would be until I could pull off these roots as an "ombre" look.  (The answer is never.)

- I have my second PT appointment after work today, and I'm looking forward to it.  I've been doing my weird neck exercises religiously all week, so I hope he sees a little bit of improvement, and teaches me some other weird stuff I can do all day while sitting at my desk.

- I made chicken alfredo last night for dinner, and it was downright amazing.  I had originally planned to use a jar of Prego alfredo sauce, but I opened it, and it kind of smelled like nacho cheese.  It was certainly "not-my-cheese" [ba-dum-ch...get it?!] that I wanted to serve to my family over perfectly seasoned chicken and al dente fettucine.  So I made this go-to sauce I discovered a little while ago, which is so so so good.  I need to remember to halve the recipe next time though because it made way too much.

Welp, that's really all I have to complain and rejoice about today...

After an awesome time beginning on Friday at 6 PM up until Sunday at about 8 PM (most of which having to do with food -- Italian Lodge Friday (HOLLA to my new fans!), Boro Saturday for lunch, Bube's Brewery for dinner that night) this week has totally sucked.  Let's count the ways.

- We'll go ahead and get the Broncos completely blowing the biggest game of their careers out of the way first.  There, I said it. 

- Then I thought, well, hey, at least I have off on Monday!  The governor then decided to point and laugh and call the rest of the state off as well.  Bye bye, 7.5 hours of personal leave.

- Of course my physical therapy appointment was still on as scheduled, so I had to shovel my driveway, clean off my car, actually put a bra on and venture a mile out into the world.  The appointment went great, but whilst I was in there, it proceeded to snow another two inches, and my vehicle was plowed into its spot.

- I then spent the rest of the day and night by myself, watching stupid daytime TV, and drinking beer rum and cokes.  (I had a beer with my chicken enchilada lunch, it only seemed right for that moment.)  Miah didn't get home from work until 11 PM, at which point, I was clearly sleeping.


- We didn't actually see each other with our eyes open and awake until last night at 8:30 PM, since I obviously worked yesterday, and he had to take Emma to soccer at 6:00 last night.

- Fast forward to this morning, when I thought I'd wake up to a solid 3 inches of snow with a 1/4-inch of ice on top of it and receive a day off work (a free one this time)...alas, we were only granted a 3-hour delay and I had to again, clean off my car, put a bra on, and leave the house.  [#firstworldproblems]  My car was like a giant Ford Igloo.  I almost fell several times, while trying to simultaneously avoid being impaled by flying icicles in all directions.

I'm at work now, and to give yet another indication of how shitty today was: I starting writing this post at 11:20 this morning...it is now 4:09.  I hate actually having to do WORK at work.

Okay, yeah, if it could go ahead and be Friday now, THAT'D BE GREAT.  Our weekend has slowly been filling up with plans and after a weekend of doing absolutely nothing last week, I'm kind of looking forward to a bunch of fun stuff to do.  Also, it's supposed to "warm up" into the 40s!  Wee!

We're making our first appearance at the Hershey Italian Lodge tomorrow night with Miah's Aunt Gretchen and Uncle John (and Sally, John's mom, my favorite white-wine-drinking-lady), and I have to say, I'm totally looking forward to it.  I love "members only"-type places and I'm really glad they asked to tag along as their guests for the night.  Saturday morning/lunchtime-ish, my mom is coming down for "light shopping and heavy lunch," as she called it.  I'm hoping to take her to The Boro for beer, wings, and soup - our shopping-break lunch of champions.

Saturday night, we're going with our usual crew to Bube's Brewery to celebrate our friend's 30th birthday.  I've never been there before, but I've heard it's a pretty cool place.  And of course Sunday, I'll be at the church across the street from our house, praying for a Super Bowl win by the Broncos.  I'm kidding about church, but not so much about praying for the win.  I semi-invited people over to watch it, but no one has mentioned anything about actually coming...either way, I'll be too busy wearing my lucky jersey, with my lucky Broncos blanket and my lucky Broncos pillow, screaming at the television, to even notice if there are other human beings in my living room with me.

Brrr.

I am really, really sick of winter.  The "real feel" temperature this morning is -10 degrees.  I think I read somewhere that it's actually warmer in Alaska.  Weather like this makes me want to exactly nothing, and that's what I did ALL. Weekend. Long.  It was glorious; I left the house once between Friday night and Monday morning, and that was only to go to my sister-in-law's house to commence the same activities on her couch instead of mine (movie-watching, beer-drinking, junk-eating).  We watched This is the End, and while we both heard it was dumb, we were cracking up throughout the whole thing.  Probably because of the aforementioned beer-drinking.

We also have pretty much nothing going on this week, which is also lovely.  When I got home from work last night, Miah had dinner ready, it seriously made my day.  I'm so miserable by the time I get home from work, from dealing with stupid people all day.  It's really quite exhausting.

I start carpooling on Thursday with my new friend who is not a serial killer nor is she weird.  I'm interested to see how much money I save on gas with only driving a few days a week, or every other week...we haven't decided yet.

Something else that begins on Thursday is a 30-Day Squat Challenge that my co-workers and I are trying.  A week or so in, we're supposed to be doing 120 of them.  Should be fun.

I'm already looking forward to the weekend, and it's only Tuesday.

Doctor, Doctor, Gimme the News

I was in such a miserable mood for the better part of yesterday.  I don't know if it was because we didn't have a delay and I was really hoping for one, or if it was just due to massive amounts of stupidity I'm dealt every day.  I'm in a better mood today though, so yay.

I had an appointment with an orthopedist this morning, in hopes of figuring out why my upper back/neck hurts 24 hours a day, since ohhhh, 2008-ish.  He's sending me to physical therapy (shocker) so we'll see what that does for me.  Probably nothing, considering I sit in the same position for 8 hours a day, plus the 30 minutes I spend in the car twice a day, neither of which is helpful to the pain.  I'm really hoping I can just go a few times and try and replicate the exercises at home, because that shit is FREE.  Oh, and he did write me a prescription for an "ergonomically correct chair" for work, so there's that.

Last night for dinner, I made a recipe we saw over the weekend on The Sandwich King, and it was AH-MAZ-ING.  I didn't follow the recipe exactly, and I actually used smoked sausage instead, but whatever.  It was still delicious.

I also made a cheese sauce (from scratch, not the Velveeta he uses in his recipe...I have a weird thing about buying fake cheese), which you'll see here, drizzled over the frozen waffle fries I spent lots of time and effort on.
Miah has been asking me to make these little egg cups, so we made those last night too.  They turned out pretty good overall, I just wish I would've chopped up the monstrous mushrooms beforehand.  It was nice being able to throw one into the microwave this morning for 30 seconds and BOOM breakfast!


Happy hour with the potential carpooler is tonight, so I hope she's not weird and/or a serial killer.  That would really be a bummer.

Weekend Recap

Welp, cue the "Did you hear we're getting out early?" rumors.  It's currently snowing pretty hard, and we're due to get anywhere from 3 to 873456 inches, according to all of the various forecasts.  Therefore, I will alternate staring at ABC 27's Twitter feed and the window, for the duration of the day.

We had such a great weekend in Delaware - the weather was nice (for January), we ate some delicious food, drank some fantastic beers, and hung out at a couple of really cool bars/restaurants.  We arrived earlier than anticipated, and thankfully were able to check-in early into the Blue Water House, our first B&B stop in Lewes, DE.  This place was SO. FREAKING. COOL.  Such an eclectic blend of decorations, without screaming tackiness.

There were a lot of great "word signs" throughout the whole place, our favorite of which read: "The best things in life are not things."  I smell a Pinterest craft coming our way.

After spending a few minutes looking around and settling into our room, we decided to head down to Rehoboth and go for a drink at the Purple Parrot, the establishment where we celebrated our engagement back in June of 2012.  We ordered a few Sam Adamses (is that the correct plural?) and some spinach, artichoke, and crap dip, which was quite tasty and held us over until dinner.

Jerry's Seafood was our dinner destination, as we ate there a few years ago and remembered it being amazing.  It was good, it didn't blow us out of the water, but it was definitely decent.  I ordered a cup of the cream of crab soup for an appetizer, and that was really good - but the tuna I ordered for dinner was only okay.  Part of the reason was because I thought I was ordering something totally different than what came out, but whatevs.

I spent most of Sunday in a nervous panic due to the impending AFC Championship game that was set to start at 3 PM.  We found ourselves at The Greene Turtle for kickoff, with a pretty cool view of the ocean in the backdrop.  Thankfully the majority of the clientele was also rooting for the Broncos, so that made for a very enjoyable experience as opposed to the alternative.

We headed home pretty early yesterday morning after breakfast at our second B&B stay, the Rehoboth Guest House.  This place was very nice, but not quite as "comfy" as the BWH.  The homemade, from-scratch cinnamon rolls that Steve made for us were one of the most amazing things I've ever eaten, however, and I would probably go back solely for one of those!

We were home by noon, and it was nice to relax at home for once.  I made this and also this and they were both delicious - below is a shot of the baked oatmeal I can't get the stupid picture to load; the French onion soup wasn't quite as pretty, since I don't have any ovenproof bowls (how this is possible, I have no clue). 

Hopefully I'll be on my way back home in a few hours...time to go check the window.

Shits and Giggles Friday

My favorite day of the work-week has finally decided to show its face!  Definitely looking forward to this three-day weekend and trip out of town ahead of me. 

SHITS

- I really wish it were acceptable to wear a football jersey to work.  Instead, I have to settle on wearing blue, orange, and white, and have people probably thinking that I got dressed in the dark.

- I had every intention of getting up early this morning and using the elliptical, however, that did not happen.  I will now spend the rest of the day thinking, "I'll do it after work when I get home!" and then when that time comes, I will instead sit on the couch and drink a beer.

- One of duties at work is to manually update "employee history cards."  WITH A MOTHER-EFFING TYPEWRITER.  As it is the beginning of the new year, consequently, I will spend most of my day updating approxmiately 400 employee cards with their new salary.  It actually makes me physically ill to complete this task. 

My fingers are glued to my typewriter said no one ever in 2013!

- I've been using the MyFitnessPal app since the beginning of this week, in an effort to fit into my work clothes a little more comfortably.  Here's how I did, in reference to how many calories I had remaining at the end of each day:

Monday = -3
Tuesday = -600 (perhaps because I had a cheesesteak and fries for lunch)
Wednesday = -207
Thursday = -426

GIGGLES

- The Broncos are playing in the AFC Championship this Sunday.  The last time they were here was in January 2006, when they lost to the eventual Super Bowl champs, the Steelers.  Please say a small prayer that Peyton can beat Brady and make it to the big game for the first time since the 1998 season.

- Next week, I'm meeting with a potential carpooling buddy.  Not because I'm super green or anything, but mostly because I'm poor and gas is expensive.  I was glad that she was receptive to my idea of meeting for happy hour instead of coffee, so we at least have THAT in common.

- I am SO beyond excited to give Miah his anniversary gift tomorrow!  I usually am the worst at gift-giving when it comes to him, mainly because I know he's going to outshine me anyways, but I feel like I did pretty well on this one.
 
- I've been reading Orange is the New Black over the past few weeks, and it's quite entertaining.  Also, I would never survive in prison.
 
- We're going for dinner tonight at one of my favorite local places, the Boro.  I'll probably order a salad a dozen wings and cheese fries.

Back in the Blogging Game

So, yesterday, I deactivated my Facebook account.  This is a big deal, as I was probably spending a good portion of my day checking it, reading links from it, stalking people, etc., and it was really doing nothing for me.  Honestly, it was getting to the point where I really couldn't stand what about 90% of the people on my friends list were posting.  You and your child are on your way to the emeregency room?  And the first thing you thought to do was tell 300 people about it?  Seriously.  I deleted the app from my phone and removed the link from my bookmarks on my work computer.  As I posted on Instagram yesterday (not nearly as annoying/addicting as FB): #byefacebook #itsbeenreal.

Also, I realize that it's been a hot minute since I've posted anything on here, but we're going to ignore that tidbit and pretend that I never left.

In two days, Miah and I will have been married for a YEAR.  I still remember the day we decided, "Hey, what if we just got married next week one day and didn't tell anyone until after it was over?"  We were a little concerned that our family and friends would be upset with us, but once we started to spread the news, overall, it was pretty well-received. 

Doing it the way we did allowed us to celebrate several times, which was awesome - that day and following weekend, it was just us.  A few weekends after that, we celebrated with my brother-in-law and sister-in-law and some of her family with a simple champagne toast on a lazy Sunday watching football at their house.  Later that month, my whole immediate-ish family all went out for a nice dinner together.  One of my favorite celebrations happened over the summer, when my sister-in-law put together the best surprise party ever for us at our favorite local winery and brewery.  The most recent and probably the most memorable of the wedding festivites was going to Mexico with some of our favorite people on the planet, and doing a vow renewal ceremony right on the water.


This weekend will conclude the year of partying with a weekend in Delaware, just the two of us, staying at two different B&Bs in the town where he proposed.  I am SO looking forward to it - the last time we went on a solo getaway was our sorta honeymoon, which was, hey, a year ago!

I will do my best to report back with some food and wine pics - I'm glad to be back.
